Recipe Of The Month: Avocado - Cilantro Spread

Ingredients
1 ripe fresh California avocado (6.1 oz)
1 oz goat cheese, low-fat or semi-soft
1/4 tsp onion powder
1 1/2 Tbsp chopped cilantro
1/8 tsp black pepper
1 dash cayenne pepper
1/8 tsp salt
1 Tbsp freshly-squeezed lime juice

Directions:
Combine avocado with goat cheese and mix until well blended. Add remaining ingredients and mix well.

Let stand for 1 hour at room temperature to let flavors blend.

Garnish with fresh lime slices and a sprig of cilantro. Serve.

Variations:
Serve on half-bagel or on a rice cake.

Recipe Of The Month: Pork Stir Fry with Snow Peas

Here is your Recipe Of The Month: Pork Stir Fry with Snow Peas. This is one of our favorite Stir Fry Recipes. It's protein packed with a serving of complex carbohydrates and Vegetables.

Pork Stir Fry with Snow Peas

Ingrediants:

• 1 cup uncooked brown rice
• 2 cup water
• 2 Tbsp oyster sauce
• 1 tsp sugar
• 1 chicken stock cube
• 2 Tbsp water, extra
• 17 1/2 oz lean pork stir-fry strips
• 2 tsp cornstarch or 4 tsp whole wheat flour
• 1 Tbsp Shaoxing rice wine or dry sherry (optional)
• 2 Tbsp low sodium soy sauce
• 2 Tbsp peanut oil, divided
• 2 garlic cloves, chopped
• 1 piece of ginger (1/2-inch), chopped
• 1 small red chili pepper (to taste), seeded and sliced
• 6 spring onions, cut into bite-sized pieces
• 6 1/2 oz snow peas, halved

Directions:
Wash and steam rice in 2 cups water (see recipe link below).
In medium sized bowl, mix oyster sauce, sugar, stock cube and water together. Combine pork with cornstarch or whole wheat flour, rice wine, soy sauce and marinate for 10 minutes.
Heat wok or skillet until hot. Add a drizzle of oil (about 1 tablespoon). Stir fry garlic, ginger and chili pepper until fragrant. Stir-fry pork in 1 to 2 batches for about a minute and remove from pan.
Add a little more oil (about 1 tablespoon) to the pan. Stir-fry spring onions and snow peas for 30 seconds until hot, but still crisp. Return pork to pan.
Push pork and vegetables to the side. Mix and add sauce mixture to the pork-vegetable mixture. Stir and bring to a simmer. Mix together and heat through. Serve with steamed rice.

Recipe Of The Month: Anabolic Muffins

This is our first nutritious recipe posting. Though our taste-buds may or may not allow for us to enjoy different foods, please keep an open mind with these recipes. Feel free to adjust or modify recipes to your taste-buds likings, and please post recipe modifications so we may make the recipes more enjoyable. IDEAS ARE ENCOURAGED, as we are all searching for a healthier way of life.

This first recipe is a Protein Packed Muffin great for breakfast or any late morning snack. Eggwhite protein combined with apples, berries, oatmeal and yam mixture is a great way to start off any morning.

Ingredients:

Paper muffin shells
1 yam or sweat potato
12-16 egg whites
3-4 cups oatmeal
1 cup apple sauce
1 cup chopped apple
1 cup blue berries (optional)

Directions:

Preheat oven to 400 degrees

Cook yam in microwave until fully cooked.
In a large mixing bowl, put the insides of yam and mix with cinnamon until creamy. Add egg whites, oatmeal, apple sauce and then mix. Then add chopped apples and blueberries. Place paper muffin shells in muffin pan and fill ¾’s with muffin batter. Cook 8-14 minutes until done. Check with toothpick for texture.
