Crock Pot Pork Carnitas

carnitasIngredients

  • 2# pork roast
  • 1-15oz can diced tomatoes
  • 1/2 tsp oregano
  • 1 tbsp cumin
  • 1/2 tsp salt
  • 3/4 C water
  • Cilantro for topping
  • 1 tbsp olive oil
  • 1 onion sliced
  • 1 bay leaf
  • t tbsp smoked paprika
  • 1/2 tsp pepper
  • 1 lime, cut into wedges
  • 1/2 tsp crushed red pepper (optional)

Heat olive oil in a pan over med-high heat. Add pork and brown on all sides. Take out and let rest while prepping the other ingredients. Slice the onion and garlic. Place the pork roast in the crock pot and top with the rest of the ingredients. Cook on low heat for 7-9 hours. REMOVE THE BAY LEAF! Remove pork to a cutting board and shred using two forks. Place pork back in the crock pot with the remaining juices. Serve in a whole grain tortilla with a few leaves of cilantro and a squeeze of lime juice. ENJOY!
